Ingredients (serves 25)

  • 10 cloves garlic ; minced
  • 10 pounds prime rib
  • 2 tablespoons olive oil
  • 2 teaspoons thyme ; dried
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • Directions

    Combine oil, thyme, garlic, salt, and pepper in a small bowl.

    Place the prime rib in a roasting pan, fatty side up.

    Spread the garlic mixture over the fatty layer of the prime rib. Let it sit out until it reaches room temperature, but for no longer than one hour.

    Preheat oven to 500F (260C).

    Bake for 20 minutes at 500F (260C), then reduce heat to 325F (165C).   Continue cooking for an extra 60 to 75 minutes, or until a meat thermometer inserted into the roast reads 145F (53C), for medium rare.

    Remove from oven and let sit for 10 to 15 minutes before carving.

    You can use a chuck roast if you want to, but no it will not be prime rib by any means. It should still be a decnet roast if cooked properly. Prime rib is a better cut and more tender than chuck, which explains why it is indeed more costly.You can put the chuck roast in the crockpot with beef stock and veggies, or you can even use a cooking/roasting bag by McCormick's and it will turn out even better. I too agree with you TOTALLY on the price of beef nowadays, it's ridiculous! I usually buy rib roasts when they are on sale for $4.99 a pound ..still not exactly cheap, but the price of it is usually $8.99 and up when it's not on sale References :
