Rotini Primavera Salad

A cool and colorful pasta salad.

Original recipe serves 5.

Ingredients

1 medium onions ; chopped
1 cup carrots ; sliced
1 cup mozzarella cheese ; cubed. Can substitute with provolone
1 cup zucchini ; sliced
1 red bell pepper ; chopped
8 ounces rotini ; primavera, cooked as package directs
2 tablespoons parmesan cheese ; grated
Italian dressing ; to taste

Preparation:

Place cooked pasta in a large bowl. Add all vegatables and cheese. Pour dressing over the pasta and vegetables, and toss to coat. Sprinkle with parmesan cheese. Refrigerate for at least 2 hours. Serves 4 to 6.
