Ingredients (serves 4)

  • 2 medium cucumber ; thinly sliced
  • 1 large tomatoes ; thinly sliced
  • 1/2 small onions ; red, thinly sliced
  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons mayonnaise
  • Directions

    Toss the onions, cucumber and tomato together in a medium bowl.

    Stir in the salt, pepper, mayonnaise and vinegar until the vegetables are coated.

    Store in the refrigerator, covered, for 1 hour or until serving.
