Ingredients (serves 4)

  • 1/2 teaspoon pumpkin pie spice
  • 1 cup pumpkin seeds ; raw, rinsed and dried
  • 1 tablespoon vegetable oil
  • 6 tablespoons sugar
  • 1/4 teaspoon salt

  • You will also need: baking sheet

    Directions

    1. Preheat the oven to 250F (120C)
    2. Arrange seeds in a single layer on a baking sheet. Toast in the oven for 45 minutes until toasted and dry, stirring occassionally.
    3. Combine pumpkin pie spice, salt and 2 tablespoons of the sugar in a large bowl and set aside.
    4. Heat the oil in a large skillet over medium-high  heat and add the toasted pumpkin seeds. Sprinkle the remaining sugar.
    5. Use a wooden spoon to stir until the sugar melts, about 45 seconds.
    6. Pour the seeds into the bowl with the pumpkin pie spice mixture and stir to coat.
    7. Allow to cool before serving.
