Ingredients (serves 8)

  • 8 ounces green chiles ; chopped
  • 4 cups chicken ; cooked, diced
  • 2 medium onions ; chopped
  • 2 cloves garlic ; minced
  • 1 tablespoon cumin ; plus 1 teaspoon
  • 1 1/2 teaspoons oregano ; dried
  • 1/4 teaspoon cayenne pepper
  • 5 cups chicken broth ; or stock
  • 42 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 1 tablespoon vegetable oil
  • 1/4 tablespoon cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

  • You will also need: saucepan

    Directions

    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
