Curry Sauce

A creamy sauce that is good hot on chicken, or as a cold salad dressing.

Original recipe serves 5.

Scaling (About scaling and units)

Ingredients

salt ; to taste
1 tablespoon wine vinegar
4 tablespoons tomato juice
1 cup cottage cheese ; use low-fat if desired
6 tablespoons vegetable oil
black pepper ; to taste
2 tablespoons lemon juice
1 onions ; finely chopped
1 tablespoon curry powder ; powder
2 teaspoons apricot jam

Preparation:

Saute onion in 1 tbsp oil until soft but not brown. Add curry powder and stir for 2 minutes. Add tomato juice and vinegar. Simmer until reduced by half. Stir in jam, and then cool. Place mixture in food processor and blend until smooth. Blend in lemon juice and cottage cheese. Add remaining oil slowly. Season with salt and pepper to taste. Makes enough sauce to cover a little more than 1 lb of chicken pieces!
