Chicken in a pineapple sauce

Ingredients

8 ounces pineapples ; canned, crushed, not drained
1/4 cup yellow mustard
2 tablespoons brown sugar
1 pound chicken ; bonelness, skinless breasts
1/4 cup cider vinegar
2 tablespoons soy sauce
1/8 teaspoon ginger ; ground

Preparation:

Place chicken in a shallow casserole dish or 8 inch baking pan. Combine remaining ingredients in a small bowl and pour over chicken. Bake at 350F for 35 to 45 minutes or until chicken is done. Serve over rice if desired.

Pretty good stuff! You can try Dijon mustard in place of yellow mustard. Any kind of prepared mustard will do, actually.
