Crispy Catfish Fillets

Catfish fillets with a buttery crust

Original recipe serves 4.

Halve it | Double it | Triple it | Reset
Ingredients

0.25 parsley ; minced
1/4 cup butter ; melted
1/2 cup parmesan cheese ; grated
20 crackers ; buttery (i.e. Ritz), crushed
4 fillets catfish ; about 8 ounces each

Preparation:

Combine cheese, parsley and crackers in a large shallow bowl. Dip fillets in butter and then in cracker mixture to coat. Lay fillets on an aluminum foil baking pan. Bake at 400 degress F for 15-20 minutes.
