Ingredients

2 fillets salmon ; 6 oz each
1 teaspoon basil
2 cloves garlic ; minced
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon lemon juice
1 tablespoon parsley ; fresh, chopped

Preparation:

Combine oil, basil, salt, pepper, lemon juice and parsley ib a medium glass bowl. Place the salmon in a glass baking dish, and cover the fillets with the marinade. Refrigerate for 1 hour. Turn the salmon occasionally.

Preheat an oven to 375F (190C).

Put the salmon in foil, add the marinade, and seal the foil around the fillets. Place the sealed salmon back in the baking dish, and bake for 35 to 45 minutes, or until the fish easily flakes with a fork.
