Honey Oat Muffins

Easy muffins with honey and oats

Original recipe serves 12.

Ingredients

0.875 cup all-purpose flour
3/8 cup oatmeal ; divided
1 tablespoon olive oil
1/2 tablespoon honey
1/2 teaspoon garlic powder
1/2 teaspoon oregano ; dried
1/2 teaspoon basil ; dried
1/8 cup egg substitute, liquid
1/8 teaspoon salt
0.625 cup milk
1/8 cup applesauce
1/2 tablespoon baking powder

Preparation:

Spray a 12-cup muffin pan with cooking spray. Preheat oven to 425F (218C). Stir 1/2 cup of the oatmeal, basil, salt, garlic powder, oregano and flour in a medium bowl. In a small bowl, combine the remaining ingredients except for the rest of the outmeal. Pour this in to the flour mixture and stir until combined. Overmixing may cause the muffins to be tough. Spoon batter into the muffin coups, filling to about 3/4 full. Sprinkle with remaining oats. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove muffins and cool.
