Ingredients (serves 16)

  • 2 1/2 pounds chicken ; boneless skinless breast, cut into strips
  • 32 ounces corn ; canned, drained
  • 4 tablespoons chili powder
  • 2 teaspoons onion powder
  • 2 tablespoons vegetable oil
  • 30 ounces tomato sauce
  • 2 cups cheddar cheese
  • 8 ounces chili pepper ; chopped, green
  • 8 ounces tortilla chips

  • Directions

     Prep: 15 min | Cook: 20 min | Ready in: 35 min
    1. Heat oil in a large skillet over medium heat.
    2. Add chicken and cook 5 minutes, stirring frequently.
    3. Add remaining ingredients except tortilla chips and bring to a boil.
    4. Reduce heat to medium low and cook an additional 10 minutes,stirring constantly until chicken is cooked through.
    5. To serve, spoon mixture over tortilla chips and top with cheddar cheese.

    pretty easy to make and tastes good too. i used canola oil instead of vegetable oil.
