Ingredients (serves 72)

  • 3 teaspoons salt
  • 3/4 cup onions ; grated
  • 1 1/2 cups parsley ; chopped
  • 3 cloves garlic
  • 18 tablespoons lemon juice
  • 18 tablespoons olive oil
  • 90 ounces chickpeas ; rinsed and drained
  • 3/4 cup tahini ; sesame

  • You will also need: food processor


    Combine all ingredients in a food processor until smooth. Let stand for 30 minutes before serving. Serve with warm pita points, crackers or vegetables.
