Ingredients (serves 3)

  • 1/2 cup apples ; peeled, chopped
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/8 cup butter ; melted
  • 1 egg(s)
  • 1/2 cup yogurt ; vanilla flavored
  • 1/4 cup sugar

  • Directions

    Preheat oven to 375F. Combine flour, cinnamon, sugar, baking and soda in a large bowl. In a separate bowl, wcombine the eggs, butter and yogurt. Pour the egg mixture into flour mixture. Stir in the apples and combine well. Pour into muffin tins and bake for 20-25 minutes, or until a toothpick comes out clean.

    Use 1 and 3/4 cup skim milk in all and add 1teaspoon of lemon juice or vinegar in it, not both. The sour cream was there to make the bread more tneedr. In the future If you don't have sour cream or yogurt or buttermilk then just add 1 tsp of something acidic like lemon juice or vinegar or orange juice don't need much. the acid reacts with the baking soda to work as soon as it is added it starts making carbon dioxide to make your bread rise, the baking powder reacts with the moisture and the heat of the oven to make your bread rise. I add the juice and rind of an orange to my own ch chip cookie recipe and it makes them soft and tasty too.Chef
