Ingredients (serves 16)

  • 2 pounds chicken ; boneless breast, cooked and diced
  • 2/3 cup raisins ; golden
  • 1 teaspoon curry powder
  • 2 whole apples ; Golden Delicious, peeled, cored and diced
  • 1 cup pecans ; toasted, chopped
  • 1 1/2 cups mayonnaise ; light
  • 8 green onions ; chopped
  • 2 stalks celery ; chopped
  • 2/3 cup grapes ; green, seedless
  • 1/4 teaspoon black pepper

  • Directions

    Combine all ingredients in a large bowl.

    This is best served a day after preparation to allow the flavors to blend well.
