Ingredients (serves 2)

  • 4 ounces pineapples ; canned, crushed, not drained
  • 1/8 cup yellow mustard
  • 1 tablespoon brown sugar
  • 1/2 pound chicken ; bonelness, skinless breasts
  • 1/8 cup cider vinegar
  • 1 tablespoon soy sauce
  • 0.0625 teaspoon ginger ; ground

  • You will also need: casserole dish

    Directions

    1. Preheat oven to 350F (175C).
    2. Place chicken in a shallow casserole dish or 8 inch baking pan.
    3. Combine remaining ingredients in a small bowl and pour over chicken.
    4. Bake in preheated oven for 35 to 45 minutes or until chicken is done. Serve over rice if desired.

    Pretty good stuff! You can try Dijon mustard in place of yellow mustard. Any kind of prepared mustard will do, actually.
