Ingredients (serves 3)

  • salt ; to taste
  • 1/2 pound shrimp ; medium, peeled and deveined
  • parmesan cheese ; to taste
  • 6 ounces penne
  • 1 red bell pepper ; cut into thin strips
  • black pepper ; to taste
  • 2 tablespoons butter
  • 3 tablespoons lemon juice
  • 1 teaspoon garlic ; chopped
  • 1/2 teaspoon lemon zest

    Cook pasta according to package directions and drain. Melt butter in a large skillet until sizzling, and add garlic and pepper strips. Cook over medium heat, stirring for 2 to 3 minutes or until peppers are crispy tender. Add lemon juice and shrimp, stirring constantly, until shrimp turn pink, 1 to 2 minutes. Add cooked pasta and lemon zest. Toss lightly. Sprinkle with parmesan cheese and season to taste with salt and pepper. Makes 3 servings.
