Ingredients (serves 36)

  • 6 teaspoons salt
  • 120 fluid ounces water
  • 6 medium onions ; chopped
  • 18 apples ; tart, green, peeled and chopped
  • 1 1/2 teaspoons black pepper
  • 180 fluid ounces chicken broth
  • 1 1/2 cups heavy cream
  • 6 medium butternut squash ; peeled, seeded and cut into chunks
  • 3 teaspoons cinnamon ; or to taste
  • 3 teaspoons nutmeg ; or to taste

    Combine all ingredients, except cream. Bring to boil and simmer uncovered 45 minutes. Puree soup in blender. Return mixture to sauce pan and bring to boiling point. Before serving, add cream.
