A sauce of garlic and oil. This version contains no eggs so it can't go bad in the heat.

Ingredients (serves 2)

½ 2x 3x Reset

  • 1/2 teaspoon salt
  • 2 cloves garlic ; peeled
  • lemon juice ; from 1/4 of a lemon
  • 1/4 cup olive oil ; extra virgin

    Directions

     Prep: 15 min | Ready in: 15 min
    1. Crush garlic and salt until you have a fine paste using a mortar and pestal, or use a food processor.
    2. Transfer garlic mixture to a nonreactive bowl. Drizzle in 1/4 cup of the oil, whisking to make an emulsion.
    3. Whisk in lemon juice, and then drizzle in the remaining oil, whisking constantly. Makes 3/4 cup.

    I've been making my aioli like this for years, I do tend to add a little water to loosen the emulsion though

    If you want to make sure it gets the right consistency, don't add the 1/4 cup all at once, Instead, drizzle the oil very slowly, just a bit at a time, then mix until it gels, then drizzle some more. It takes longer but you end up with a firm, gelled aioli. .

    I mixed in eggless mayo to get the right consistancy for the dip Without mayor it tastes amazing but the consistency isnt even dippable, its like garlic drink :P Adding a bit dragon tastes good aswell!

    This looks like it will be a perfect cotcssneniy. I usually end up combining different recipes to get the one I want, but yours looks exactly like what I try to do. I usually buy king crab legs and have my guy clean them and then use paper towels to make sure to get all the water out of the meat. I'll definitely try snow crab because where I live it is way more affordable than king so we can have them more often. Defintely will try the sauce too. Thanks so much for posting this!     Yes, Don't listen to the first user.  Traditional Aioli does not contain egg.  It's just garlic, Virgin Olive oil (or evoo if you like) and salt (The lemon juice is optional).

    This is actually real aioli. Ai (Ajo-garlic) Oli (Oil), Aioli is an emulsion not garlic mayo.

    dont listen to the other person -- classic aioli does not contain eggs, garlic (& opt. mustard) emulsify.

    This is a ridiculously bad recipe! This is simply an aioli recipe with the egg omitted! You will not get the proper consistency.
