Ingredients (serves 8)

  • 2 tablespoons paprika
  • 4 teaspoons cayenne pepper ; ground
  • 2 teaspoons thyme ; crushed
  • 4 tablespoons canola oil
  • black pepper ; to taste
  • 4 tablespoons lemon juice
  • 2 pounds chicken ; boneless, skinless breasts
  • 2 cloves garlic ; thinly sliced
  • 2 tablespoons brown sugar
  • 2 teaspoons oregano ; dried
  • salt ; to taste
  • 2 teaspoons sage ; crushed

    Directions

    Use a sharp knife to cut 2 or 3 slits into each chicken breast. Insert a slice of garlic into each slit and season with salt and black pepper to taste. In a small bowl, combine brown sugar, cayenne pepper, sage, oregano, paprika and thyme. Rub chicken with the spice mixture. Chill in refrigerator for 2 to 24 hours. In a small bowl, mix canola oil and lemon juice. Brush oil mixture onto seasoned chicken. Preheat a grill to medium heat. Grill for 12 to 15 minutes or until juices run clear, turning once.

    Very good. Goes well with some kind of rice dish. We had this with a store-bought "New Orleans style" rice pilaf.
