Ingredients (serves 6)

  • 2 tablespoons basil ; ground
  • 6 tablespoons oregano ; ground
  • 2 cups white wine
  • 4 teaspoons parsley ; ground
  • 6 cloves garlic ; chopped and crushed
  • 2 pounds chicken ; boneless, skinless breast cutlets
  • 6 tablespoons lemon juice
  • 2 cups all-purpose flour ; or just enough to cover chicken
  • 1/2 cup olive oil
  • 1 cup chicken broth

  • Directions

    1. Coat chicken in flour.
    2. In a large skillet, combine all ingredients and add coated chicken.
    3. Cover and simmer on medium heat for about 20 minutes, checking for doneness occasionally.
    4. Stir in additional flour to increase thickness if desired. Serve over pasta.
    Original recipe makes about 3 servings.
