Ingredients (serves 4)

  • monterey jack cheese ; shredded
  • 1 teaspoon chili powder
  • 1/4 pound chicken ; boneless breast. cooked, cut into bite size pieces
  • 1 1/2 cloves garlic ; minced
  • 1/2 tablespoon olive oil
  • 0.5 onions ; chopped
  • 10 ounces tomatoes ; crushed
  • 5 1/4 ounces chicken broth
  • 7 1/2 ounces black beans ; drained
  • 1/2 teaspoon oregano ; dried
  • 2 ounces chili pepper ; green, chopped
  • 1/8 cup cilantro ; fresh, chopped
  • 1/2 cup corn ; kernels, cooked
  • 1/2 cup hominy
  • 0.625 cup water
  • tortilla chips ; crushed
  • green onions ; chopped

  • Directions

    Heat oil over medium heat in a large pot. Saute garlic and onion until soft. Add oregano, chili powder, broth, water, and tomotoes. Bring to a boil and simmer for 5 minutes. Stir in chiles, hominy, cilantro, beans, chicken and corn. Simmer an additional 10 minutes. Spoon soup into serving bowls. Top with cheese, green onions and crushed tortilla chips. Serves 8.
