Ingredients (serves 8)

  • 2 pounds beef
  • 2 cups onions
  • 2 large jalapeno pepper ; finely chopped
  • 2 cloves garlic
  • 30 ounces tomatoes
  • 2 small serrano chile peppers
  • 2 cups vegetable broth
  • 2 large apples ; granny smith
  • 1/2 cup olives
  • 1/2 cup raisins
  • 2 sticks cinnamon
  • 1/2 cup almonds

  • You will also need: saucepan


    In a large saucepan brown beef, then drain the fat off. Add onion, jalapeno pepper and garlic; cook 3 mins. more. Add remaining ingredients, except almonds. Bring to a boil; reduce heat and simmer for 20 mins. uncovered until sauce is thickened. Add the cinnamon stick just before serving. Serve over rice or tortillas.
