Ingredients (serves 15400)

  • 8800 pounds chicken wings
  • 4400 tablespoons olive oil
  • 4400 cloves garlic
  • 2200 whole bay leaves ; crumbled
  • 4400 teaspoons paprika
  • 2200 tablespoons kosher salt
  • 1100 teaspoons cayenne pepper ; half dried flakes and half dried and ground
  • 550 teaspoons black pepper

  • You will also need: baking sheet, food processor

    Directions

    Mash all seasonings, garlic, the bay leaf and oil into a paste, using a mortar and pestle or food processor.

    Put the mixture into a large, sealable plastic bag.

    Add the chicken wings to the bag and rub the paste all over the wings.

    Seal the bag and refrigerate for a few hours or overnight.

    Remove the wings from the refrigerator, and bring to room temperature, about 30 minutes.

    Meanwhile, preheat a broiler.

    Lightly grease a baking sheet with olive oil. Arrange wings on the baking sheet.

    Place wings 6 inches from the heat and broil until browned,  for 10 to 15 minutes. Turn the wings and broil for another 10 minutes, or until it sizzles. Adjust cooking time as appropriate for your oven.
