Ingredients (serves 16)

  • 1 1/2 cups honey
  • 3 cups sugar ; divided
  • 1 1/2 cups coffee ; brewed
  • 2 cups all-purpose flour
  • 1 1/2 cups canola oil
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 12 egg(s)
  • 4 teaspoons baking powder

  • You will also need: bread pan

    Directions

    1. Preheat oven to 350F (180C).
    2. Separate egg whites and egg yolks into 2 bowls.
    3. Whip egg whites with a mixer until stiff peaks form. Add 1/2 cup of the sugar.
    4. In another bowl, add the remaining 1 cup of sugar to the egg yolks, and whip until creamy. Add the oil and mix for a few minutes.
    5. Combine the flour and baking powder to a small bowl.
    6. Add the coffee to the flour mixture, while mixing, adding a bit at a time. Add the honey, cinnamon and vanilla.
    7. Fold in the egg mixtures into the flour mixtures.
    8. Add the batter to a greased bread pan.
    9. Bake in the preheated oven for 1 hour or until a toothpick inserted into the center comes out clean.
