  • 746496 cups chicken ; cooked, diced
  • 373248 medium onions ; chopped
  • 373248 cloves garlic ; minced
  • 186624 tablespoons cumin ; plus 1 teaspoon
  • 279936 teaspoons oregano ; dried
  • 46656 teaspoons cayenne pepper
  • 933120 cups chicken broth ; or stock
  • 7838208 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 186624 tablespoons vegetable oil
  • 46656 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
