  • 884736 ounces green chiles ; chopped
  • 442368 cups chicken ; cooked, diced
  • 221184 medium onions ; chopped
  • 221184 cloves garlic ; minced
  • 110592 tablespoons cumin ; plus 1 teaspoon
  • 165888 teaspoons oregano ; dried
  • 27648 teaspoons cayenne pepper
  • 552960 cups chicken broth ; or stock
  • 4644864 ounces cannellini beans ; (three 16 oz cans), or other white beans
  • 110592 tablespoons vegetable oil
  • 27648 tablespoons cloves ; ground
  • salt ; to taste
  • black pepper ; to taste

    Directions

     Prep: 20 min | Cook: 1 hr 5 min | Ready in: 1 hr 25 min
    1. Heat oil in a large saucepan over medium heat.
    2. Add the onion and garlic and cook for 5 minutes or until softened.
    3. Add oregano, cumin, cayenne pepper and cloves and cook for another minute.
    4. Add the chicken broth and cook for one hour over low heat for 40 minutes, adding more broth as needed.
    5. Add the beans and cooked chicken and cook for another 20 minutes. 
    6. Serve with grated cheddar or monterey jack cheese, salsa and sour cream, if desired.
