The immature, edible greed flower bud of a Mediterranean thistlelike globe artichoke plant. Artichokes are usually cooked by removing the stems and boiling or steaming the bud. To eat, the lobed, thick scales that form the bud are pulled off one by one and dipped into some kind of sauce, such as a butter and lemon sauce or some kind of mayonnaise or vinaigrette. The inner flesh is then scraped off with the teeth and the rest is discarded.
