Soy flour is made from soybeans that have been roasted and ground. Soy flour comes in three varieties: defatted, full fat, and low fat. Full fat contains the natural oils found in soybeans. Low fat has varying degrees of the oil. Defatted soy flour has all of the oil removed. All varieties will give a protein boost to recipes, and add moisture. Baked products using soy flour tend to brown quicker than their all-purpose flour counterparts, so baking time may need to be adjusted accordingly.
