Haddock (also known as offshore hake) is a fish from both sides of the North Atlantic ocean. It is easily identified by a black, lateral line that runs along its white side.

Fresh haddock has a white, translucent flesh. Older haddock as a bit of a more chalky color. Its freshness can be determined by how well it holds together. It is not preserved well by salt, and is thus usually preserved by smoking or drying. Haddock fillets are exceptionally lean, and are an excellent source of protein and vitamin B12.
