Often used in East Asian, especially Chinese, cooking, oyster sauce refers to a brown condiment made from the essence or extract of oysters, salt, sugar, water, seasonings, and usually thickened with cornstarch. Many modern sauces may be darkened with caramel, however, a high quality sauce should naturally dark.

This sauce adds a savory flavor to many dishes, especially for meats. It is also commonly used in noodle and vegetable stir frys.
