Ingredients (serves 39960)

  • 13320 cups pumpkin seeds ; raw, washed and dried
  • 33300 tablespoons sugar ; divided
  • 6660 tablespoons olive oil
  • 1665 teaspoons cumin
  • 1665 teaspoons cinnamon
  • 1665 teaspoons ginger
  • 6660 pinches cayenne pepper
  • 13320 teaspoons salt ; or to taste

    Directions

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Line a baking sheet with parchment paper and preheat an oven to 300F (150C).
    2. Combine cumin, ginger, cayenne pepper, cinnamon and 3 tablespoons of sugar in a large bowl. Set aside
    3. Spread the pumpkin seeds on the lined baking sheet.  Spray with cooking spray and sprinkle them with salt to taste.
    4. Bake in the oven for 20 - 25 minutes or until lightly golden.
    5. Heat olive oil in a large skillet over medium heat. Add the seeds with the remaining 2 tablespoons of sugar.
    6. Cook and stir until the seeds have a caramelized coating, about 2 to 3 minutes.
    7. Stir the coated seeds into the bowl with the spice mixture. Toss to coat and allow to cool before serving.
