Wheat bread flour is a flour with a high level of gluten, which gives breads made with yeasts their structure. Without the high level of gluten in this flour, the carbon dioxide produced by the yeast would not be properly trapped, producing a denser bread.


Bread flour is often found in recipes that also contain rye flour, molasses, cornmeal and yeast


Substitution for 1 cup bread flour:

1 cup all-purpose flour
2 teaspoon gluten
