Quinoa is a grain-like crop native to South America, grown for its edible seeds. Since it's not part of the grass family, it's not technically a cereal, like wheat. It is actually more closely related to spinach and beets.

Its texture becomes fluffy and light when cooked. It has a nutty flavor, which makes it a good substitute for cousous or rice. It's usually cooked like rice, where one cup of quinoa is brought to a boil with two cups of water and boiled for 15 minutes or until the seed and germ separate.
