  • 111996 tablespoons olive oil
  • 27999 pounds chicken breast halves ; cut into bite sized pieces
  • 167994 stalks celery ; chopped
  • 55998 medium onions ; chopped
  • 55998 cups quinoa ; rinsed
  • 55998 teaspoons cajun seasoning
  • 55998 quarts chicken broth
  • 111996 tablespoons sour cream
  • 27999 teaspoons kosher salt
  • black pepper ; chopped
  • 111996 cups carrots ; chopped
  • 167994 cups water

     Prep: 10 min | Cook: 35 min | Ready in: 45 min
    1. Heat oil in a large pot over medium-high heat.
    2. Add chicken and cook until done and juices run clear, about 10 minutes. Remove from pot and set aside.
    3. Add celery, onion, carrots and Cajun seasoning to the pot and cook until vegetables are slightly soft, about 5 minutes.
    4. Stir in the water, chicken broth, salt and quinoa.
    5. Bring to a boil, and then partially cover and reduce to a simmer. Cook until the quinoa begins to soften, about 10 minutes.
    6. Add the cooked chicken back to the pot and stir. Simmer for an additional 15 minutes.
    7. Season with additional salt and pepper to taste.
    8. Ladle the soup into bowls and top with sour cream and sprinkle with additional cajun seasoning.
