Ingredients (serves 2912)

  • 1456 tablespoons olive oil
  • 364 pounds chicken breast halves ; cut into bite sized pieces
  • 2184 stalks celery ; chopped
  • 728 medium onions ; chopped
  • 728 cups quinoa ; rinsed
  • 728 teaspoons cajun seasoning
  • 728 quarts chicken broth
  • 1456 tablespoons sour cream
  • 364 teaspoons kosher salt
  • black pepper ; chopped
  • 1456 cups carrots ; chopped
  • 2184 cups water

     Prep: 10 min | Cook: 35 min | Ready in: 45 min
    1. Heat oil in a large pot over medium-high heat.
    2. Add chicken and cook until done and juices run clear, about 10 minutes. Remove from pot and set aside.
    3. Add celery, onion, carrots and Cajun seasoning to the pot and cook until vegetables are slightly soft, about 5 minutes.
    4. Stir in the water, chicken broth, salt and quinoa.
    5. Bring to a boil, and then partially cover and reduce to a simmer. Cook until the quinoa begins to soften, about 10 minutes.
    6. Add the cooked chicken back to the pot and stir. Simmer for an additional 15 minutes.
    7. Season with additional salt and pepper to taste.
    8. Ladle the soup into bowls and top with sour cream and sprinkle with additional cajun seasoning.
