Chorizo is a form of pork sausage originating from the Iberian Peninsula, which now includes Spain, Portugal, Andorra and Gibralter. In Europe, it is usually a fermented, cured sausage that is sliced and eaten without being cooked. Like Spanish chorizo, the Mexican version is also a deep red color. However, green versions are also found in Mexico. The coloring comes from either paprika or chile peppers. Other varieties found across the world are made with indigenous spices.
