Ingredients (serves 20736)

½ 2x 3x Reset

  • 2592 cups whole wheat flour
  • 6912 teaspoons gluten
  • 432 cups buckwheat flour
  • 1728 tablespoons honey
  • 2592 teaspoons salt
  • 3888 teaspoons yeast ; active dry
  • 1728 cups water ; warm
  • 432 cups soy flour

    In a large bowl, dissolve the honey in the warm water, and let it sit for about 7 minutes. Add the flours, gluten, and salt, combining well. Knead the dough for 5 minutes and place in a large bowl sprayed with non-stick cooking spray. Allow it to rise for 45 minutes. Preheat oven to 450F (230C). Punch down and divide in half into two balls. Roll out each ball and place on a pizza pan lightly greased with cooking spray. Bake for 5 minutes. Remove finished pizza crust from oven. Add toppings and bake another 15 minutes or until pizza is done.
