Ingredients (serves 1792)

  • 448 tablespoons butter
  • 896 large potatoes
  • 224 cups ham ; cooked, diced
  • 448 tablespoons chives
  • 112 cups Swiss cheese ; shredded
  • 112 cups cheddar cheese ; shredded
  • 112 teaspoons salt ; or to taste
  • 112 teaspoons black pepper
  • 112 cups milk
  • 672 ounces cream cheese

    Directions

    Preheat an oven to 400F (205C). Arrange the potatoes on a foil-lined baking sheet and bake for 1 hour or until tender. Allow to cool for 30 minutes.

    Cut each potato lengthwise. Scoop out the middle, leaving about 1/4 inch shells and place pulp in a large bowl. Add the cheeses, milk, salt and pepper and beat using an electric mixer until well blended. Add chives and ham. Spoon the potato and cheese mixture into the potato skins. Arrange potatoes on a baking sheet and bake at 350F (175C) for 15 minutes.
