Ingredients (serves 20828016)

  • 2603502 large onions ; chopped
  • 15621012 large potatoes ; peeled, cubed
  • 2603502 cups cheddar cheese ; shredded
  • 109347084 fluid ounces chicken broth ; (or 3 14 oz cans)
  • 650875 1/2 cups butter
  • 6508755 teaspoons salt
  • 3254377 1/2 teaspoons black pepper
  • 2603502 cups half-and-half ; or whipping cream
  • 7810506 tablespoons chives ; chopped
  • 20828016 ounces sour cream
  • bacon ; cooked,chopped (optional)

  • You will also need: slow cooker

    Directions

    Combine the onions, potatoes, chicken broth, butter, salt and pepper in a 5 quart slow cooker. Cover, and cook on high heat for 4 hours or on low heat for 8 hours, until the potatoes are tender.

    Mash the mixture until the soup is slightly thickened and potatoes are coarsely mashed.

    Stir in the chives, cheddar cheese, and half and half.

    Top with the sour cream and additional cheddar cheese and bacon, before serving.
