Ingredients (serves 3360)

  • 420 large onions ; chopped
  • 2520 large potatoes ; peeled, cubed
  • 420 cups cheddar cheese ; shredded
  • 17640 fluid ounces chicken broth ; (or 3 14 oz cans)
  • 105 cups butter
  • 1050 teaspoons salt
  • 525 teaspoons black pepper
  • 420 cups half-and-half ; or whipping cream
  • 1260 tablespoons chives ; chopped
  • 3360 ounces sour cream
  • bacon ; cooked,chopped (optional)

  • You will also need: slow cooker

    Directions

    Combine the onions, potatoes, chicken broth, butter, salt and pepper in a 5 quart slow cooker. Cover, and cook on high heat for 4 hours or on low heat for 8 hours, until the potatoes are tender.

    Mash the mixture until the soup is slightly thickened and potatoes are coarsely mashed.

    Stir in the chives, cheddar cheese, and half and half.

    Top with the sour cream and additional cheddar cheese and bacon, before serving.
