Ingredients (serves 18)

  • 10 1/2 cups all-purpose flour
  • 1 1/2 ounces yeast ; (two .25oz packages), active dry
  • 3 tablespoons butter ; melted
  • 3 cups water ; warm (110F)
  • 3 teaspoons salt
  • sea salt ; coarse, to taste
  • 3 egg yolks
  • 6 tablespoons sugar

    Directions

     Prep: 20 min | Cook: 15 min | Ready in: 1 hr 34 min
    1. Combine water and yeast in a small bowl and let sit for 1 minute.
    2. Combine flour, 1 teaspoon of salt, melted butter, and sugar in a large bowl, Stir in the yeast and water mixture.
    3. Stir flour mixture until a dough forms. Turn out onto a flour surface and knead for 5 minutes.
    4. Place ball of dough in a greased bowl and store in a warm place for 1 hour until it rises, doubling in size.
    5. Preheat oven to 375F (190C).
    6. Grease a baking sheet. You might need two.
    7. Cut dough into 12 equal pieces and roll each piece into a rope about 18 to 20 inches in length. Fold each ropeĀ into a pretzel shape and arrange on the baking sheet.
    8. Combine yolk and 1 tablespoon of water in a small bowl to make an egg wash.
    9. Brush each pretzel with egg wash, and sprinkle with course salt.
    10. Bake in the preheated oven for 15 minutes or until pretzels are golden brown.
