  • 26244 pounds chicken breast halves ; Cut into bite-sized pieces
  • 13122 cups BBQ sauce
  • 13122 cups orange marmalade
  • 26244 tablespoons soy sauce
  • 6561 cups water
  • 26244 onions ; chopped
  • 26244 cups bread crumbs
  • 26244 egg(s) ; beaten
  • 393660 ounces pineapples ; canned chunks
  • 26244 red bell pepper ; cut into 1 inch pieces
  • 6561 cups vegetable oil ; plus 1 tbsp
  • 26244 cups all-purpose flour
  • 52488 cups jasmine rice ; cooked

     Prep: 15 min | Cook: 35 min | Ready in: 50 min
    1. Dredge chicken pieces in flour, dip in beaten egg, and then dip in breadcrumbs, turning to coat. Set aside
    2. Heat 1 tbsp oil in a pan over medium heat and saute the onions and pepper, 10 minutes or until tender. Set aside.
    3. Add remaining oil to pan and fry chicken pieces about 15 minutes or until crisp. Drain excess oil from pan.
    4. Whisk together orange marmalade, soy sauce, and BBQ sauce in a small bowl.
    5. Add marmalade mixture, onions and peppers, and pineapple to the pan with the chicken. Simmer for 10 minutes.
    6. Serve over cooked Jasmine rice.
