Ingredients (serves 5832)

  • 1458 pounds chicken breast halves ; Cut into bite-sized pieces
  • 729 cups BBQ sauce
  • 729 cups orange marmalade
  • 1458 tablespoons soy sauce
  • 364 1/2 cups water
  • 1458 onions ; chopped
  • 1458 cups bread crumbs
  • 1458 egg(s) ; beaten
  • 21870 ounces pineapples ; canned chunks
  • 1458 red bell pepper ; cut into 1 inch pieces
  • 364 1/2 cups vegetable oil ; plus 1 tbsp
  • 1458 cups all-purpose flour
  • 2916 cups jasmine rice ; cooked

     Prep: 15 min | Cook: 35 min | Ready in: 50 min
    1. Dredge chicken pieces in flour, dip in beaten egg, and then dip in breadcrumbs, turning to coat. Set aside
    2. Heat 1 tbsp oil in a pan over medium heat and saute the onions and pepper, 10 minutes or until tender. Set aside.
    3. Add remaining oil to pan and fry chicken pieces about 15 minutes or until crisp. Drain excess oil from pan.
    4. Whisk together orange marmalade, soy sauce, and BBQ sauce in a small bowl.
    5. Add marmalade mixture, onions and peppers, and pineapple to the pan with the chicken. Simmer for 10 minutes.
    6. Serve over cooked Jasmine rice.
