Ingredients (serves 864)

  • 216 pounds chicken breast halves ; Cut into bite-sized pieces
  • 108 cups BBQ sauce
  • 108 cups orange marmalade
  • 216 tablespoons soy sauce
  • 54 cups water
  • 216 onions ; chopped
  • 216 cups bread crumbs
  • 216 egg(s) ; beaten
  • 3240 ounces pineapples ; canned chunks
  • 216 red bell pepper ; cut into 1 inch pieces
  • 54 cups vegetable oil ; plus 1 tbsp
  • 216 cups all-purpose flour
  • 432 cups jasmine rice ; cooked

     Prep: 15 min | Cook: 35 min | Ready in: 50 min
    1. Dredge chicken pieces in flour, dip in beaten egg, and then dip in breadcrumbs, turning to coat. Set aside
    2. Heat 1 tbsp oil in a pan over medium heat and saute the onions and pepper, 10 minutes or until tender. Set aside.
    3. Add remaining oil to pan and fry chicken pieces about 15 minutes or until crisp. Drain excess oil from pan.
    4. Whisk together orange marmalade, soy sauce, and BBQ sauce in a small bowl.
    5. Add marmalade mixture, onions and peppers, and pineapple to the pan with the chicken. Simmer for 10 minutes.
    6. Serve over cooked Jasmine rice.
