Ingredients (serves 12)

  • 1 tablespoon sugar ; plus more to taste
  • 1 tablespoon salt ; plus more to taste
  • 3 pounds chicken
  • 5 slices ginger ; 1/4 inch long, fresh ginger
  • 4 scallions ; trimmed and cut into 3 in. lengths
  • 1/3 cup sherry

  • Directions

    Fill a large pot with water and bring to a boil. Sprinkle chicken with salt and sugar. Place half the scallions and 2 slices of the ginger with the chicken. Place the chicken into the large pot and top with the remaining scallions and ginger. Cover for about 50 minutes.
