Ingredients (serves 60)

  • 10 teaspoons mint ; dried
  • 10 cups bulgur ; uncooked
  • 15 cups tomatoes ; diced
  • 5 cups green onions
  • 10 tablespoons olive oil
  • 3.33 cups lemon juice ; fresh
  • 2 1/2 cups parsley ; chopped
  • 10 cups cucumber ; diced, seeded
  • 5 teaspoons salt
  • 10 cups water ; boiling

  • Directions

    Combine bulgur and boiling water in a large bowl. Cover and let stand for 30 minutes or until water is absorbed. Add remaining ingredients, blending well. Cover and refrigerate for 2 hours before serving.
