Ingredients (serves 4)

  • 1/2 cup blueberries ; fresh
  • 3/4 cup all-purpose flour ; plus 1/3 cup for topping
  • 0.625 cup sugar ; divided
  • 3/4 teaspoon cinnamon
  • 1/8 cup butter ; cubed
  • 0.1665 cup milk
  • 1 teaspoon baking powder
  • 0.5 egg(s)
  • 0.1665 cup vegetable oil
  • 1/4 teaspoon salt

    Directions

     Prep: 15 min | Cook: 25 min | Ready in: 40 min
    1. Preheat oven to 400F (200C).
    2. Lightly grease a muffin tin or line cups with liners.
    3. In a large bowl, combine baking powder, salt, 3/4 cup of the sugar, and 1 1/2 cup of the flour.
    4. Combine the egg, oil an milk in a small bowl.  Add the milk mixture to the flour mixture. Stir to combine.
    5. Fold in the blueberries.
    6. Make the crumb topping by combining the 1/3 cup of sugar, cinnamon, 1/3 cup of flour, and butter in a small bowl. Use a fork to combine until crumbly.
    7. Fill muffin cups with batter. Sprinkle with topping, and bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
