Cheese and Potato Pancakes

Potato pancakes with a twist. It's got cheese!

Original recipe serves 6.

Ingredients

1 small onions ; shredded
3 large potatoes ; peeled and shredded
3 tablespoons all-purpose flour
olive oil ; for frying
1 1/4 cups gouda cheese ; shredded

Preparation:

Add a thin layer of olive oil to a heated skillet, just enough to cover the bottom. Combine flour, onions and potatoes in a bowl. Stir in gouda cheese. Spoon piles of potato and cheese mixture into the pan, making 3-inch rounds, 1-inch apart. Cook cakes until golden and crispy, about 4 minutes on each side. Remove cooked cakes and repeat process. Makes 12 pancakes.
