Little pita pizzas with a Mediterranean twist.

Original recipe serves 4.

Ingredients

1/2 teaspoon garlic powder
1 teaspoon oregano
1 tomatoes ; thinly sliced
1/2 cup feta cheese ; crumbled
10 ounces spinach ; frozen, chopped, drained
1 cup ricotta cheese ; part skim
whole pita bread ; wheat

Preparation:

Preheat oven to 400F. Arrange pits on a baking sheet. In a small bowl, combine garlic powder and ricotta choose. Spoon mixture over the pitas, spreading within 1/2 inch of the edge of the pitas. Top with feta, spinach and tomato slices. Sprinkle with oregano. Bake 12 minutes, or until edges are golden.
