Ingredients (serves 4)

  • 1/2 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 tomatoes ; thinly sliced
  • 1/2 cup feta cheese ; crumbled
  • 10 ounces spinach ; frozen, chopped, drained
  • 1 cup ricotta cheese ; part skim
  • whole pita bread ; wheat

  • You will also need: baking sheet

    Directions

    Preheat oven to 400F. Arrange pits on a baking sheet. In a small bowl, combine garlic powder and ricotta choose. Spoon mixture over the pitas, spreading within 1/2 inch of the edge of the pitas. Top with feta, spinach and tomato slices. Sprinkle with oregano. Bake 12 minutes, or until edges are golden.
