Banana Bread

A classic banana bread.

Original recipe serves 18.

Ingredients

1 cup sugar
confectioner's sugar
1 tablespoon baking soda
2 cups all-purpose flour
2 egg(s)
1/2 cup butter
2 bananas ; very ripe, peeled, mashed
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup buttermilk

Preparation:

Preheat oven to 375F. Grease two loaf pans (4x7 inch) or line muffin tins. In a medium bowl, combine baking soda, flour and salt. In a large bowl, cream sugar and butter, until fluffy. Add eggs, spices, and vanilla. Beat well. Blend in buttermilk and alternating flour mixture and banana until smooth and combined well. Spoon into pans. Cook on center rack of oven until done, about 50 minutes for bread loaves or 25 minutes for standard sized muffins. Cool pans for a few minutes before turning onto a wire rack. Dust with confectioner's sugar when cool. Makes 2 small loaves or 18 muffins.
